My crispy sticky chinese pork recipe

Just wanted to share a recipe that I made up and I've never seen elsewhere.
My OH loves it so much we haven't had a take away chinese for months, whip this up, with some stirfryed veg and egg noodles/rice and we have a winner.
Start with a Pork fillet (long thin and round cut, looks like a big tongue)
Trim off the fat, dice into small strips, about the size of a carrot stick.
Get frying pan very hot and cook the pork in a dash of oil, you don't want it "tender" you want it well browned, crispy and almost snap able.
Turn the heat down and chuck in about 3 gloves of diced garlic and one or two diced red chilli's and simmer until wilted and softened.
Add a good glug of honey and sweet chilli sauce, simmer for a min or two until reduced and all sticky, turn off the heat and add lots of sesame seeds and toss.
