Left over roast lamb recipes?

Not really left over, as haven't eaten any yet. Visiting family and somehow came home with a lamb joint. Have carved the meat and chucked it in the fridge. Now I just need a way to make it into something half decent or at least edible for the kids.
Had a quick look online, but all the recipe sites presume you have some idea how to make stuff - which I don't. Wife busy this weekend so need something straight forward to make it into a dinner of some description.
Any ideas?

Keeping the cooking to a real minimum run to a shop and get a bag of frozen mixed veg and a few potatoes.
Peel and boil the potatoes until soft, then mash them. Add a bit of butter or whatever, salt and white pepper.
Chop up the lamb, mix with the frozen veg in an oven proof dish. Add some mixed dried herbs and pepper. Add a couple of spoons of tomato puree and mix, sprinkle a spoon of flour over and mix again.
Mix up two stock cubes with about about half a litre of boiling water, pour over the mix and stir again.
Let it cool down and then top with he mashed potatoes.
When you want to eat put it in the oven at 200 for 30 minutes or until it looks golden and ready to eat.
No need for anything else with it, just serve up and eat.

Do a google for Doner spices/seasoning and pan fry them with chopped up left over lamb. Pitta bread, garlic mayo (home made's easy enough, chilli sauce and some salad (if you want to feel a little healthier).
The spices are pretty ordinary cupboard items (IIRC, salt, pepper, oregano, garlic, onion powder, cayenne etc).
