'Light' versions of soft white cheese (Philadelphia-type) can be used to make really creamy sauces without high levels of fat.
We particularly like chunks of chicken browned in a bit of oil & then simmered gently until cooked in a sauce made from low fat soft cheese & chicken stock. Onions, garlic, chopped chills, peppers etc. etc. added according to mood.
This freezes well — so we usually makeup a decent sized batch & freeze in portions for later use.

I've been a Mayonnaise lover for as long as I can remember....however, despite there being a 'light' version of Hellmans available, it's still basically 'fat in a jar' whichever way you look at it! 
So, when I went on a massive diet, I switched to Heinz 'Low Calorie' salad cream as an alternative. Ok, it doesn't have the creaminess of mayo, but I grew to love it too - and as it has a much stronger flavour than mayo, I found I could get away with using it far more sparingly.
