Thanks Andy, though I think we have the answer now.
Our Bakery, which is part of a larger group of unrelated businesses, recently installed a prover that is pissing water across the floor. This seems largely related to the fact that there is no drain inside the prover to collect the condensation as it falls to the floor. Those who installed the prover were adamant that no drain was required but a brief course in RTFM showed otherwise.
It's never easy.

Some are designed not to require drainage, as the condensation can be controlled by other methods, but when dealing with high humidity applications, it's always wise to consider some form of drainage. For example we used Acrivarn units in the past that claim to have no need for drainage, but due to the product type and usage, we always had wet floors (which we had to squeegee out regularly).
