As per the title, really.

I've got a freezer full of frozen veg such as broccoli, carrots, peas, etc. I am trying to increase my veg intake, as I am simply not eating enough.

Frozen veg simply boiled / thawed tastes pretty mundane. Any suggestions for making things a little more exciting without slathering them in something unhealthy?

I really like Leeks, peas and spring onions (ideally in butter but it would work fine with a little oil instead. Soften leeks for 15mins in covered pan with Oil/Butter, add chicken stock, peas and apply heat until peas are done, stir through some spring onions and serve.

Cook them in some tasty but healthy stock, chuck in some diced left over cooked meat, seasoning etc. to taste (e.g. tomato puree, soy and/or worcestershire sauce) & serve in bowls over rice or noodles.

Frozen sliced leeks & frozen savoy cabbage also work well in this.

Brown rice and seasoning of your choice; makes veg part of the meal rather than just 'I know I should be eating this'. Even a plain old green oxo cube does a pretty damn good job of blinging up veg/rice.

Stir fry is always a good bet.

If you like black bean sauce then get some of these

Chop a small handful of them up and soak them in water to soften them. Add them to the stir fry with garlic, ginger, chilli, soy.

Tastes so much better than store bought sauce.


Other ideas:

  • Ramen
  • Thai Red/Green curry
