I'm out of my comfort zone here - I'm trying to plan a vegetarian meal, which I'd never do at home. Plus I'm going to be cooking it in someone else's small kitchen which just complicates things a bit. So I'm on Google having a sniff around for options that would impress, but I'm not finding much on the BBC site.

To me something like that just shows a complete lack of effort or interest.... if the main ingredient in them is prepared and microwaveable, why not just buy a takeaway or a microwave meal laugh

Is there any decent vegetarian sites I can browse through? Too many options seem a bit fiddly to do in someone else's kitchen, or they just don't seem like a side dish I'd have with a steak rather than a legitimate meal on its own laugh

I wish I'd properly planned ahead. I already done thai curry (pork and prawn), chinese stir fry (chicken) , and indian curry (beef). I could have easily done a hearty, filling vegetarian alternative to any of those but I want to do something completely different frown

I know this doesn't really answer your question, but a very, very simple vegetarian lasagne I have the recipe of is in my opinion delicious.

Ingredients:

9-12 Lasagne Sheets
250g of Cheddar
2 tablespoons of grated parmasan

1 Tablespoon of Olive Oil
2 Onions, chopped
2 Garlic cloves
1 Tin of chopped tomatoes (or use fresh tomatoes if you prefer)
1 Tin of butter beans
1 Tin of Kidney beans
1 teaspoon of chilli sauce (I prefer Chinese dipping sauce)
Handful of spinach leaves
Oregano
Seasoning

Method:

1) Purée the butter beans (it doesn't matter if some remain whole)
2) Heat the oil, fry the onions and garlic until soft
3) Stir in the tomatoes, kidney beans (drained), puréed butter beans, chilli sauce, oregano, seasoning and cook for about 10 mins.
4) Wilt spinach with a splash of water
5) Construct as per normal lasagne, with mixture and spinach finishing with the cheese top. Cook for 20-30 mins at about 175°

I service it with roasted new potatoes and something like kale or broccoli.

Other than the butter beans, it's very simple and very cheap!

Thanks, lasagna is definitely a possibility. Perhaps getting it ready to go in oven earlier that day then take it with me. Should travel okay? Then do a quick garlic bread along with it once there.

Not very fashionable but Delia Smith's website has some decent vegetarian recipes. This moussaka:

Is really very good, I've served it as a standalone dish to diehard carnivores with good feedback!

I find the bbc food website the default choice when looking for online recipes. For best results search by individual chef- they employ directly or indirectly most of the best ones.

Whatever you might think of his TV persona try searching for recipes by Simon Rimmer. All the vegetarian dishes of his I've tried have been superb - particularly his sprout and potato quiche.

I'd second Delia (second time tonight!).

Try her oven baked wild mushroom risotto. Killer dish and easy to do. First thing I ever cooked Mrs Murph7355.

There's a Jamie Oliver Massaman curry recipe, which is really good and pretty simple, just make the curry paste at home (the recipe makes loads of paste, so save some to go with prawns/chicken).

I like the idea of that curry but had already done a different curry recently... trying to add a bit of variety smile

Try Parmigiana Melanzane, with a good homemade tomato sauce and lots of mozzarella, it has proven popular with my non-veg friends.

One I always used to take inspiration from when I was a chef and creating menu's was www.britishlarder.co.uk and it's all seasonal aswell!

On another note I'm a massive meat fan but the wife cooked a whole baked cauliflower the other week and it was fantastic, will see if I can find the recipe for you!
