Help please fellas.... I need to make a load up tomorrow for bbq on sat/sun. Would like nice easy recipes please... One lot of HOT ones and two not so hot. My plan is to put each lot in a freezer bag tomorrow and leave them marinade until Saturday.

I tried it with wings and thighs and adding cheyenne chilli pepper to the mix when I wanted some extra heat. Also did them with garlic pepper.

I made a stack of boneless hot chicken the other day was fking amazing covered in buffalo

you dont need to marinate the wings in the sauce for good results. Some of the best ones I've done had a 24 hour buttermilk marinade ( with a little hot sauce in it ) Sauce after deep frying smile

Don't know if you have access to a deep fat fryer, but marinade in the butter milk first for a day, then coat them all in flour and flash them in the fryer, don't cook them all the way just par cook, then marinade those bhed until Saturday and finish off on the bbq!

If your cooking on the BBQ then those flat and wider skewers make it easier to flip them all like you see in the kebab shops.

Simple marinade of crushed garlic, harrisa paste, lemon juice and some olive oil is what I use for mine and cook them indirect away from coals with the lid on at 180-200c with a drip tray underneath. Take about 50mins to get nicely crisped up and the bones should just pull out with a gentle twist. You can add some wood chips for a slight smokey flavour.

The problem with marinating wings before cooking is that you burn the marinate in the frying process and it tastes awful. As posted above, either soak them in buttermilk or brine them before a coating of flour and a quick shallow fry then finish off in the oven.

Sauce them after cooking, and for my money, you can't beat Frank's Buffalo Sauce.

Thanks all! smile I've got 3 lots ready, one salt & pepper as per the link above but with a bit of cayenne, one BBQ and one with hot Nandos powder, some hot hot chilli squeezy sauce I found at Aldi and garlic. Pics to follow

I know this will sound too simple, but it works, Honey BBQ chicken wings
Coat the base of a a dinner plate in golden honey
Add a teaspoon of Olive oil, and dark soy sauce a little at a time to taste, until you get a smokey flavour
Pierce the skin of chicken wings and coat in the mixture
Leave in the fridge for 8 hours, then coat again before placing on the barbie

Potato salad
Cube potato's and boil until cooked
Caramelize onions
Put mayo in a bowl, add chilli powder until rather hot, Garam masala, Turmeric, add a little squeeze of lemon juice and the caramelized onions and mix together. Then add the potato's and mix well together, place in a cold fridge for 2/3 hours. the temp of the ingredients with the spice work well together.

Serve together with a Greek salad and don't forget the beers, enjoy.

Thanks for all the suggestions smile and sorry for late reply. Salt and pepper ones were great with a half teaspoon of cayenne and the chilli ones were hot as hell, great bbq
