Individual pork ribs

In the hope of decent weather tomorrow I went to the butchers looking for some ribs to cook. The only ones he had left were pork spare ribs already cut into individual ribs. Anyone with any ideas if these can still be smoked or will they dry out too much?

My idea would be to smoke them for a much shorter period than normal then finish them cooking wrapped in some foil in he smoker or the oven.

Tie them together with butcher's string and treat them the same as a rack...

No problem, I've done that myself on occasion. Ribs, being quite fatty, don't usually have an issue with drying out, but if you need to you can baste them as they cook (I keep a little pot of marinade in the BBQ for that reason, so it stays nice and hot).

The main problem with single ribs rather than a rack is that it's fiddly removing the membrane on each rib before cooking. Much easier to remove in one go with a rack!

Oh, and never finish them in foil. Better to start them off in foil if you want to do it that way. You want ribs to be crispy on the outside, and wrapping them in foil at the end will just make them soft. Finish them on the grill.
