Going to attempt one for dinner this weekend for a date(how romantic). However I don't like mushrooms, at all.

but the mushrooms are made in to a rough paste. You could make a smoother paste if it's a textural issue you have.
Or an alternative could be patè, or a breadcrumb and herb stuffing made to a light consistency. The function is really to form a bed to soak up meat juices so as not to have soggy pastry.
People use cous cous. Some use crepes. I think some sort of savoury layer adds to the overall taste of the dish.
