Picked this up from the local supermarket yesterday for lunch today - looks nice. Chicken breast stuffed with mozzarella and tomato.

How to cook though. Worried that if I pan fry the stuffing will leak everywhere and the cooking will be uneven. If I roast as is, the outside will become hard as there's no skin. I could wrap in bacon and roast but all I have is thick smoked rashers which aren't ideal. I can't be arsed to make another trip to the shops but I could to get some thinner stuff if it's the only option.

Also, roasting time - what do you reckon, 30mins at 180C?

That could work - I could chuck in some crushed garlic, rosemary and a knob of butter to help keep moist.

I've got some thyme roasted tatties from last night I can heat up to go with it.

Just fold the foil sheet and seal tightly as per here. It'll effectively steam and remain beautifully moist.

e the thick bacon, just bash it out thinner between two sheets of clingfilm, you can pretty much almost roll it out with a rollin pin tbh. You'd be surprised to see how thin you can get it, plus you'll use less!
