We've got a couple of chilli plants on the window sill in our kitchen which are quite prolific and produce more than we can use (haven't been making a lot of chilli con carne etc lately, although now the weather has turned that will likely change!) so we've been stringing them up and drying them for later use.

Anyone got any recipes/ideas of what we can do with them that will use up a good bunch?

Grind them up and try to shotgun the lot in a youtube challenge, then post the vid here.

Chicken on a bed of chillies

- Chop chicken breast into bit sized pieces
- Dunk in beaten egg and seasoned flour
- Stir fry in hot oil
- When done set aside
- In the same oil stir fry lots of garlic, spring onion and lots of dried chillies
- Add the chicken
- Add salt to balance the chilly
- Serve with rice

This is the 10 minute version. The proper Schezuan version is fecking delicious where the chicken has a lovely smoky taste and it looks like this.

I think we'll be trying that one too!

There's a very traditional Chinese place in Edinburgh called the Wing Sing Inn that do Schezuan like this and it's utterly fantastic. A revelation compared with the gloopy, sweet and sour sauce based abominations I've tried elsewhere.

Make some chilli jam or chutneys? Not sure it'll work with dried chilli, but would be a good way to get some value from them.You could take them to friends at Christmas smile

if making chutney or jam , dried chillies can be reconstituted simply in a bowl of warm water and then used after about a 20 minute soak. works great.
