Decided to clear out the freezer last night, at the bottom was a packet of skin on chicken leg quarters.
Looking for a good recipe to cook with them tonight, anyone got any ideas?

Tandoori chicken tickle your tastebuds?

Defrost the chicken thoroughly then follow as below:

Prep the chicken:
- Remove skin, and split the thigh from the drumstick if you like.
- Cut vertically into the chicken down to the bone (two cuts each on the leg and thigh)

Make the marinade by mixing the following:
- natural yogurt (approx 500g)
- 3-4 cloves of garlic (finely diced or via a press)
- Inch of finely chopped ginger
- 3-4 grene chillies (or to taste)
- Teaspoon of salt
- Teaspoon of ground pepper
- Juice of 1/2 lemon (or from a bottle)
- 2 teaspoons of garam masala
- 2 teaspoons of tandoori paste
- 1-2 teaspoons of mint sauce

Mix to make a red paste, and add the chicken and mix to coat it all. Leave in the fridge for 3-4 hours, ideally overnight.

Transfer to a foil lined over tray, cover with foil. Cook at 180'C for 20 minutes, and then uncover and cook for a further 20 mins, turning once half way. Check it is cooked through.

Serve with Salad and naan breads.
