I've made it a few times, it's a lot easier now I've got a meat slicer rather than cutting by hand

If it's the first time you're making anything like this, go minimal and be more adventurous each time.
I've not done jerky, but the first lot of pemmican I made was great with very little seasoning. When the beef costs north of £25 I didn't want to ruin it experimenting.
Only have a before picture in the dehydrator but when it was finished it was delish!

Not really, it's very simple. 1½-2 kg topside or silverside and get the butcher to slice as thin as possible. Pop it in the dehydrator until it's properly dry - took 2½ days at 40ºC for this lot. Once it's brittle pop it in the food processor and grind it pretty fine. Weigh it and add the dripping. I went 60/40 so about 330g of dripping. I also used a little pepper and ground cumin.
Supposed to last forever and a day as quick, ready snacks but I ended up scoffing it within about ten days. Dried raw beef and fat is so good.
Others add dried fruit and all sorts to it. A few recipes here and here.
