We try to alternate, one year we're home and the next we go away somewhere warm or snowy which is my preference.

This year we're at home and are having to have two Christmas Days, one on the 25th for my wife and I, our daughter, her husband and the two babies and another on the 27th for the same plus my wife's brother and his kids and grandkid's.

We've been really busy this year so at the moment we are totally disorganised and still trying to decide what to do, what are you all cooking?

We usually have a capon, this year a small one has been ordered.

I'd probably prefer a massive piece of sirloin but Mrs doesn't eat beef.

I don't particuarly like turkey, and it's an effort to cook with all the trimmings. As it's just the missus and I this year I'm doing lobster tail to start, and a meat fondue with fillet steak and chicken to follow, with salad, dips etc, and cheese to finish. Nom nom.

Couldn't decide, so have ordered

Rack of Lamb
Rib of Beef
Chateaubriand

Plus trimmings, vegetables etc; what we have will be decided on the day as to what we fancy, or if we have any others joining us (family plans are a bit up in the air).

We're having the big feast on Boxing Day when our sons get home , as it's only the 2 of us on the 25th I'm doing a pair of Cornish Game Hens brushed with balsamic oil , scallop spuds and a salad .

I'm not a great fan of turkey and we've done the huge roast beef rib on the bone thing so I'm thinking of something like a couple of guinea fowl which has a nice gamey flavour and a medium sized joint of beef or pork for Christmas Day, all served with the usual accompaniments.

The starter is likely to be simple good quality smoked salmon as we've done all the mousse and parcel combos of salmon, prawns and crab and I just can't be bothered with all the work they involve at the moment.

For the 27th I'm thinking easy again and going buffet style with beef or pork, (whichever I don't cook on the 25th), a couple of racks of lamb, maybe a piece of steamed salmon and the leftover cold cuts, that could all be served with some home made mash, hot bread and fresh salad.

Any other suggestions would be gratefully received!

A mixture of svinneribbe which is bone in pork belly and the traditional western Norway Christmas dish of pinnekjøtt which is lamb ribs that have been brined, smoked and dry cured then we soak them in water for 24 hours to draw out the salt and steam them. Serve both with mashed carrot and Swede, boiled potatoes, julepølse (Christmas sausage) and the reduced juices from the pinnekjøtt.

It really is a beauty of feast and much better than God awful turkey.

Lots of turkey. Love it, but pretty much only have it at Christmas.

Will do a ham for a breather.

Slow cooked pork one day.

Chilli one day.

Quite a few buffet type affairs with people round.

Lots of cheese.

Port.

But turkey for most of the next two weeks smile

Turducken. Only the brother inlaw and his wife this year so I can put a decent stuffing in it (my mother's allergic to pork and mushrooms).

Unfortunately as I'm away until Tuesday night the wife will be doing the Christmas shopping so we'll probably end up with some sprouts.

Our main for Christmas dinner is going to be Stifado this year. A dish we all like, key ingredients are Christmasy spices (cloves, cinnamon and nutmag) plus no one at the table is a fan of turkey.

Desert will be baileys bread and butter pudding followed later by cheeses.

I'm cooking ours this year on the 25th for us four and the two current Boyfriends.

Still undecided, can't be bothered with Turkey and we don't particularly like it so we'll probably have a free range chicken with all the trimmings and either salmon in pastry, or a filet of beef.

I don't actually mind the lutefisk, the wife's grand mother pan cooks it and serves it with burnt bacon butter and I sample my first smalahove last week at a friend's smalahovefest aside from the initiation with the eye, I thought it tasted fantastic!
