Turkey sarnies for the next three weeks, our do you have any more creative uses for the 5 metric tons of food that was cooked yesterday?

Had my parents over for dinner and neither are keen on turkey, so went for beef and pork instead. So far today, I've made 25 beef spring rolls and am just about to try and figure something out to make use of the pork.

What are you doing with yours?

We had roast lamb so I'm going to make individual sheperd's pies with the leftovers. There isn't enough meat left to make a big one smile.

Turkey and stuffing pasties. Cubed turkey, crumbled stuffing in a white cream sauce. Add mushrooms and chopped sautéed onions and use shop bought puff pastry.

Christmas dinner was roast rib of beef, Boxing day lunch was beef wraps, dinner was beef casserole scooped in to yorkies.

I did roast rib of beef and honey and maple syrup glazed ham - quite a bit of both left over (annoyingly not as much beef as I'd hoped for the MIL decided she just wanted beef and everyone else wanted both after the OH assuring me most would want ham).

The beef will be eaten in sandwiches or on it's own with some mustard as it's lovely.

Ham will probably accompany the 'Bubble and Squeak' we'll be eating for a week or so! Nothing more adventurous than that. Our first Christmas hosting and we did far too much.

Just managed bubble and squeak with ham and fried eggs to be followed by turkey burritos with refried beans tonight.

Turkey risotto for dinner tonight, the ham was only cooked yesterday so that'll be used for sandwiches for another few days before it gets used with some chicken for a pie (unless there's loads of turkey still left by then).

I made these yesterday, served with the left over veg and roast potatoes. Yummy!

Turkey stir fry and turkey curry as other options.

As previously noted, bubble and squeak is where it's at.

Pretty much this; managed to guess right so ended up for the main so nothing left. Do have a tonne of cheese though as we've spent the past 2 days eating deserts instead as sti full from Christmas Day.

So cheese board with every meal for a week I guess. Turkey curry (curry guy recipe) always gets my vote for the left over dark meat though. Very well spiced.

Did a Thai type stir fry noodle dish with the left over turkey breast meat - bit of fresh chilli, ginger, garlic, veggies, rice noodles and coconut milk etc

Quite pleasant change from the rich leftovers after 3 nights, albeit needed more seasoning.

Finished the turkey off in a stew and a paella, no trimmings or veg left and the ham is going in sarnies.

Wrapped up and kept in the fridge, longer than you think. Certainly got a few more days on it as long as you don't keep leaving it out on the side. Slice off what you want and put it straight back.
