I have this to cook. I want to slow roast it. Should I sear before or after. What temp for and time? I was thinking 100 for 3 hours until about 55 internal temp?

With a good cut of meat like rib, there's no need to slow cook it at all. And no need to sear... let the oven do the work for you!

My method for this... allow meat to come to room temperature. rub well with sea salt and freshly ground black pepper. Place (bone side down) into preheated oven at 200c. Using meat thermometer, cook until internal temp is 58c. Remove and leave to rest for 30 mins. Perfect melt-in-the-mouth rib every time.

Agreed, Rib does not benefit from low temperature cooking, you need some heat to melt the fat.

Well, kind of. It's on the high side of medium rare. The meat does still have a nice pink hue to it. I always find that rib is much better if cooked slightly more than other cuts of beef, due to its higher fat content. I'm all for rare meat where fillet is concerned though.

Just had a fillet for tea- temp was 39c when it came out of the oven and got to 45c whilst resting. Nice and rare in the middle!

It's not rib of beef. It's just a "beef roasting joint", it doesn't say which cut of meat it is. Rib of beef is expensive (usually £15+ per kilo, and that's including bones).

OP watch it like a hawk as they can overcook in a heartbeat in 1-rib form, often whilst resting, so err on the cautionary side.

I'd sear that both sides in an ovenproof frying pan and then finish in the oven.

Counter beef rib was on sale for 'half price' just before Christmas — around £10/kg.

It is rib of beef, I can tell the difference between a prepacked beef joint and massive bit of rib with three bones through it.

My mother picked some up for £5ish a kilo... she said where but I have forgotten, its definitely not from a local supermarket and definitely not from the local slaughterhouse. They use the local slaughterhouse for many cuts of meat as they know the owners and its cheaper to go direct.

Ok, sorry, I stand corrected. But you did say it was that price at the moment, which it isn't - there's only that generic joint which is £10 a kilo right now. Paying that price for rib of beef is definitely a bargain, I'm sorry that I missed it or I would have stocked up the freezer!

You seem to be insinuating I am stupid or a liar and as far as I am aware I am neither. I was just trying to help people and I honestly don't think it deserves anyone coming along to tel me that , firstly, I cannot tell the difference between a prepacked bit of cheap roasting beef and a bit of prime rib. And then secondly to post about a bargain that ceased happening over a week ago.

Others spotted it and it even featured on Hot UK Deals less than 24 hours ago.

There's no slight on you or any intent to insinuate you don't know what you are talking about, I know that you do from your previous posts. I just thought you might be mistaken in this instance, as you said rib is £10 a kilo at the moment, but when I looked on Tesco they don't have rib, the only £10/kilo item they have is a generic roasting joint. I apologise for thinking you might have made a mistake, when you clearly hadn't.

Just to note though - I didn't post about any bargain? I only linked to that beef to show you what I thought you might be referring to. Especially as I don't think that price is a bargain for a generic joint!

Cheers Calbrax , to be fair I have done a little bit of research today and it seems that this was some kind of special stock for the festive season so it would not be available online because they did not know when it would run out,
Some people in Oban have picked this up at the counter for £7'50 a KG.
I'd have had the lot biggrin

This was ours from New Years Day.

Put into the oven at 11am. Rubbed with black pepper and salt. Room temperature.

Oven at 65 degrees.

Cooked until internal temp reached 55 degrees C.

Removed whilst the roasters were finished off, and the Yorkies cooked.

Put back into a very hot oven for 15 mins to crisp up the outside.

Middle was pink / very juicy indeed / Very tender. Best I have cooked in a long time.

Used a BBQ thermometer with probe to monitor the temp.

If any of you guys have a card for Booker cash and carry, they have a decent butchery sept and have vacuum packed 5 rib joints at £5.99 a kilo with no further vat to add.

I bought one for Xmas and it was decent enough. Not dry aged, decent amount of fat on the outside but less marbling than you'd like. Still a good price though.

Even cheaper if they can't sell it. My local Bookers have to bone and roll it to sell it and resorted to mincing a lot of their last allocation. Literally only a handful of customers buy it from them as no-one wants the hassle of meat on the bone. Apparently rib is at 5.99 on the bone and 7.99 off the bone until 26 Jan.

Belly pork has just dropped to 2.49 a kilo and turkey 3.99, trimmed pork loin is 3.99 a kilo as well.

a single rib of beef (Côte de boeuf) can just be fried on a griddle pan and then the whole thing popped in a medium oven for 10 mins.

It doesn't need any messing about with.
