Something I never thought of until I saw Hugh Fernley-Wotsit do it on the telly the other day.

So I bought some smoked back from the butcher, cut the rinds off and put the whole lot in the oven at 200c for 30 mins.

Result - flat bacon for a sarnie and a side of smoked crackling!
