Masterchef 2016 / Juanita's pork dish

At some point during the competition Juanita cooked a pork dish where the pork used was a particular type that was cooked rare, as you would a steak.
I don't know what that type of pork is called, and my guesses on Google haven't turned up the answer. Any ideas? It's something I'd like to try.

The fact its Iberico doesn't mean you can cook it rare, just that its going to be good pork.
Any decent pork is good rare, personally I would use tenderloin if not something really specific like...

Jack O'Shea butchers in Primrose Hill sell Iberico pork - and it is fantastic.
Loin chops are my favourite - but they do need to be served medium rare, with the fat crispy.
I think there are 2 other cuts that are very different, Secreto and Pressa. Again, these need to be cooked medium rare, and just need salt and a squeeze of lemon juice.
