Going to have these for lunch tomorrow with steamed runner beans and potatoes fresh from the garden. For the lamb I'm thinking treat like a steak and fry at a high heat to sear but leave it very pink in the middle. Remove and rest, deglaze the pan with red wine, add some finely chopped rosemary and possibly add a little lamb stock and reduce. Does that sound OK?
