Buffet - dietary requirements challenge

Hi all,
A colleague is leaving soon and has suggested that for her last day we have a lunch buffet, and everyone brings something in. A list will go around so that someone provides snacks, someone pudding etc, the usual. The person who's leaving has the following requirements:

- No fats of any kind
- No oils of any kind
- No seeds
- No nuts
- Dairy is ok but it has to be totally fat-free.

She suggested everyone brings something in? So you take what you want and she brings her own. I doubt she/anyone with that specific a diet expects everyone else to follow it as well.
Actually, it looks like that's *exactly* what she is asking people to do. By saying that one person brings in starters, one mains, one desserts, etc, you are demanding that everyone conforms to the same nutrition requirements.
