I have a gas Weber Q3200 barbeque and I'd like to get into slow roasting and smoking meat joints. I have one of these smoker boxes;

which I believe you fill with soaked chips and place directly on the grill.

Whenever I have tried it, I only get smoke at high temperatures which then is too hot to slow cook. Is it possible to use at a lower temperature or is the idea to smoke for a short time over a higher heat?

Any recipe or technique suggestions would be gratefully received!

Hi - try the offset method - i.e. place meat on one side, create a baffle (a partial blockage cross middle) and then have your heat/smoker on the other side.
