At some point this week something tripped the garage circuit. cry The freezer is now fully defrosted and has a slight whiff but I'm hoping to salvage the large rolled shoulder joint for tomorrow evening.

I've put it in the fridge for now but figure in getting it in the oven tonight.

So how low and slow can I go?

I am sure you can probably go a bit lower on temp and longer, give it a go and report back.

I have a 16 hr recipe by was considering 24. Unfortunately SWMBO has thrown a spanner in the works as she is worried about poisoning her relatives...

Yeah, give it a miss. Not worth risking it. If its started to smell and its a rolled joint I'd bin it.
