Vegetarian for xmas

Doing dinner for 12. Going for a turkey as we have foreigners coming and I'd like to stick with tradition for the 'proper' UK xmas experience (so overcooked veg, crap telly and a massive argument smile)

One guest is a vegetarian.
Any suggestions as to what I can do for her to eat to go with the mountain of veg to make it look like I made an effort?

The OH has nut roast instead of Turkey. If your guest anything like my OH you'll need to make sure the gravy is made with veg stock, stuffing is not made with sausage meat, roast potatoes haven't been done in animal fat, mince pies and Christmas pudding dosn't have animal fat suet in, etc. You have to think about everything and what it's been cooked in or come into contact with, not just find a substitute for the Turkey!

Go mad with beetroot & squash Wellington with kale pesto. You can freeze it and cook from frozen. Less to worry about when dealing with the proper food.

My mum is a veggie and is over for Christmas, we are getting her a Sainsburys Taste the Difference three nut and mushroom roast.

Fortunately she isn't a militant veggie, I've already asked her if she would like me to do her separate roasties as I do mine in goose fat, she is fine with the goose fat ones.

I'll second that. My wife's a veggie and whenever we make this for a big family Christmas we have to make the wellington big enough for about 8 as most of the carnivores want some too.

Yep. I've cooked for vegetarians before so I'm up to speed on not cross-contaminating spoons/saucepans and knowing what fats etc are in what.

that sounds nice, and the making ahead of time sounds ideal.

Just have to find where the hell I get Sumac from. Never heard of it.

We did Xmas last year at ours, couple of my family are veggie. We got them:

I had some as well, was really good actually.

Don't forget veggie gravy, and check the deserts are suitable. I made two trifles, one veggie one real.

The question I like to pose is, if you went to an all vegetarian meal, would they cook you a steak?

Well I've just finished making 28 individual chestnut, roast parsnip, brie and cranberry pies.

Now, they remember to tell me half of them are also requesting gluten free rolleyes

Whole roast cauliflower. You can carve it for effect, and what the veggie doesn't eat becomes a side dish for normal people.
