2 stage crackling recipe anyone?

For Boxing Day, the in-laws usually have pork and I'm given the task of cooking it and presenting perfect crackling for us all to enjoy.
This year, they're not having pork but they still want me to do some crackling for them, so I'm just going to get some belly rind from the butcher and use that.
Oven space is at a premium in their house, so ideally I'd like a 2-stage process so I can prepare the rind a couple of days before to where it just needs a 10 minute blast at 200+ to finish it.
Anyone here with a foolproof method?
