food that is i have just received a Brinkmann smoke-n-grill for xmas and i was wondering where to start smile

I would suggest two things if I may, start with ribs and have a look at this web site

The trick with hot smoking is to learn how to control the heat of your smoker, and to learn how long it will maintain a constant temp for. Once you've nailed that, the world is your lobster.

Key is to get a decent thermometer - ideally one with two probes. That way you can use one to get an accurate reading of the temp inside the smoker, and the other to keep an eye on the internal temp of the meat. Loads of options on kit from £ to £££££ depending on budget.

If you don't want to risk ruining meat, you can always do a dry-run or two without to see how the temp control goes. Personally I'd say find a day where you have time to keep an eye on things, chuck some ribs on and see how you go.

The BBQ photos and recipe thread at the top of the food forum is a good place to start!

Cheap pork shoulders or ribs are good to practice on.

im quite fancying a webber igrill 2 for temperature duties. think i will season it this weekend and maybe try some ribs as a cheap start point smile

That is what I have, although from before Weber bought/rebranded them. It is good, but don't stick the magnetic base to your BBQ.

Right here we go 1.5kg of brisket salted 24 hours ago rubbed in paprika pepper chilli onion garlic ginger Bay leaf smoking over mesquite with a bath of 3 litres of leffe blonde and 3 litres of water

Texas crutch now double layer of foil and into oven at 225f till it hits 200f
