Its one of my favourite Chinese takeaway meals.

Having watched a few Youtube videos I decided to have a go at making it myself, and it turned out to be surprisingly lovely. The wife said it was as good as a takeaway, and without the salty taste (no MSG).


Frying steak
Ginger paste
Garlic paste
Chilli paste
Onion
Carrot
Spring onions
Beansprouts
Cornflour
Rice vinegar
Sesame oil
Fish sauce
Soy sauce
Tomato ketchup
Sugar
(quantities to suit)


Cut steak into strips
Place in bowl and stir in some soy sauce and some ginger, garlic & chilli paste (the tube type from Tesco).
Marinade for a few hours in fridge.
Put some cornflour in a dish and coat the steak strips, fry in hot oil till cornflour creates a crispy batter.
Drain on kitchen roll and put to one side.



For the sauce..

Peel a carrot and then peel strips off it or grate some of it into a bowl along with some thinly sliced onion and some beansprouts.
Add some fish sauce, soy sauce, sesame oil & rice vinegar (not too much as it can overpower the taste)
Add some sugar
Stir it all together and leave for a while.


Tip the above bowl into a hot wok/pan and stir. Add some tomato ketchup (this really does work).
Add some chopped spring onion.
Tip in the battered beef and toss into the sauce.
Serve with a sprinkling of sesame seeds, with some rice or noodles.

Looks excellent..! I'm feeling hungry now..

I've used Filet steak in the past as it's a bit more tender and finely sliced ginger..

I go to Booker cash and carry in Manchester quite often. You should see the amount of ketchup, brown sauce and worcestershire sauce the chinese takeaways and restaurants buy from there. It must be a staple of a lot of their sauces.

That explains why so many Chinese takeaway meals are so sickly sweet.

I had my doubts about using it but the tomato ketchup really worked.

You'll tend to find ketchup or brown sauce in a lot of those sticky/barbeque style sauces. it's an easy way to get the sticky texture and seasoning consistently.

I'll definitely be making this again soon.

Even the crispy beef on its own without the sauce tasted brilliant, I kept munching on it whilst i was making the sauce. Its one of the few meals I've made that actually tastes extremely similar to the takeaway version.

This is awesome, but...

This is a motoring forum! Its full of people who'd love to give it a go but have no clkue whatsoever what "quantity to suit" means.

Any chance of quantities? My most successful meal for her was from pH (1 pan sticky chicken), I'd love to make it 2 from 2.

Ok, I'll try my best but I just shoved in what I felt was the right amounts. The first video link I posted above should match similar to what I did...

2 to 4 x thin frying steaks
Small squirt each of ginger/garlic/chill paste

1 x onion
5 x spring onions
A few peelings from a carrot
Handfull of beansprouts
3 or 4 tablespoons of sesame oil
2 x tablespoons of rice vinegar
A glug each of soy sauce & fish sauce (maybe 1 x tablespoon of each?)
Teaspoon of salt
Tablespoon of sugar
4 x tablespoons of tomato ketchup

You want the sauce to be a bit thick and sticky, so keep adding a squirt of tomato ketchup until it looks right.

The quantities I've mentioned are only approximate, just do what you feel looks right. I sliced the carrot peelings into very thin strips, and cut the spring onions into small pieces.

One Christmas my sister and I cooked Chinese food for everyone. We used this recipe for the crispy beef:

Slightly different recipe to the OP's, but it was terribly easy, and turned out much tastier than that from the local takeaways. (Just another one to look at for the crispy beef fans!) The website/blog from that lady is very good, and well worth a look. I have made many things from there and all have been pleasing.

Very impressed with this OP seen as its Chinese New Year we popped over to China town to watch the firecrackers then I made this.

I didn't have your pastes so pestle and mortar made the ginger, garlic and sweet chilli marinade for the beef.

Wasn't sure if the beef was crispy enough after I stirfried it so I popped it on a baking tray in the oven for 5 mins while I did the veg and rice. Wife and I both very impressed with it! Better and healthier than the take away.
