Veggie breakfast, no eggs

I'm not vegetarian but often prefer the veggie breakfast option. Hash browns, mushrooms, avocado, tomato, maybe a bit of spinach, haloumi, beans. Some nice big mushrooms cooked with butter stuffed with cheese and whatever else you fancy?

Depends how much effort you want to put in (essentially, is it a lady you're trying to impress?) but chickpea flour can be used to make a reasonable vegan omelette or scrambled egg facsimile.

Ours is usually Halloumi, fried mushrooms, Linda McCartney sausages, fried tattie scones and veggie haggis.
You can also use mashed up banana instead of eggs in pancakes if the person is one of those mentals that likes banana.
