Superquick Chilli pickle
Discussion
So I found a bag of tesco's finger chillis in the fridge the other night, chillis are forever going off in my house so I thought I'd do something to them.
I took the stems off and cut them in half, then I took one lemon and cut(the whole lemon including peel) in to pieces about the same size as the pieces of chilli. This I went in to a small oven dish, together with a fair glug of olived oil, about two tablespoons of curry powder, a pinch of chilli flakes and about 1.5 of teaspoons of sea salt. This then went into the oven for 20 minutes or so.
Ready and delicious.
Taste even better the day after and the chillis mellow out a bit as well. You have to use your own judgement on how long you keep this, but a few days in the fridge should be no problem.
I just used what I had in the fridge. Chilli variety, citrus fruit, spices etc doesn't really matter what it is, I was just showing the method for a quick delicious pickle. I think blood orange and scotch bonnet with a touch of star anise could work well
