Now the Glorious twelfth has been and gone, has anyone had grouse this season? How do you normally cook it? When I get chance to pop to the local butchers I’ll be buying a brace.

Oven hot as it will go and roast for 20 minutes. Remove, cover in foil and rest for 10.

Or, if you have a meat thermometer, time until the thickest part of the breast registers 55C, then remove, cover in foil and rest for 10.

Not had it this year. A real treat.

Nice to put some bacon over the breast before roasting too, and then include it in your gravy.

Worth asking whether it's this season's bird or overwintered bird (tend to have more feathery feet and harder beaks)

The older ones are better for pot roasting.

Should have a chance of a free brace or two when I work my dog on a local moor.
