On holiday in Spain having dinner in a Tapas place run by a Polish couple, we had a dish which I think was Polish Kabanos sausage, fried in a little oil, with onion, and maybe some paprika.

I've got Kabanos and fancy trying to re-create it.

Perhaps its a Spanish dish? or a Polish one?

It defo wasn't chorizo before anyone suggests it might have been.

Any suggestions?

(For the benefit of doubt, there will not be any left over !)

Kabanos is Polish.

So, as you suggest fry in olive oil, onions and paprika (I suspect garlic) and then chuck in a mountain of fresh parley before eating with decent bread.

IMHO the best sausage for what you want is the Hungarian Kolbas sausage which is smoked paprika and blows the kabanos and chorizo into the long grass....the fresh stuff is not readily available here in the UK but a very reasonable alternative is Hungarian Mangalika spicy salami (its actually sausage) from Waitrose - usually right next to chorizo - not cheap at £4.39 but worth it.

Try cooking the dish with the premium chorizo and then do the same with the mangalika sausage - you will be able to tell the difference even from the smell when it is cooking....there is a bloody good reason that the Germans have been stocking up on this in Hungary even time i have been there!

Simplest variation is some onions, some red and green peppers, tomato or even leave it out and add chilli to your taste with the mangalika - dash of cream as below and you are sorted.

you can add chicken thighs etc and you and all your family will be dipping your bread in this all day until you feel sick! can be finished off with sour or even a some fresh cream. all in all, takes 5 min to prepare and in 20-25 minutes, all done.

Our local Tesco now stocks several varieties of Kabanos and other Polish sausages. They are in an "ethnic" section of the chills.

Fried off with onion, some of those cheating frozen chopped mixed peppers, a half teaspoon of paprika, served with brown rice.

Was good.
