Turkey internal temperature

OK guys, we've got a boned and rolled turkey for dinner this year which weighs in at 3Kg. I'm guessing around a 2 hour cooking time but what should the internal temperature be when we pull it from the oven?

Go for a core of 70 degrees to be safe. I've just done mine and it took 4 hours at 120 degrees under foil and then uncovered and basted at 180 for about half an hour.

Ankara ranges between +40 and -5/10degrees centigrade.

Depends. Mine was brined for 36 hours, then 4 hours at 120 under foil, butter basted at 180 until it looked right.




Juices still running after resting for half an hour.
