Hi

I have two brisket steaks - a similar shape to a regular sirloin steak, and weighing 250 grams each.

How do a cook them? Usually brisket is low and slow, but I'm unsure as these are not the usual joint sized pieces.

Appreciate any help

Braise them.

I've sucessfully used this recipe for several different cuts of "steak", including brisket:

I prefer to drop the oven down to 160 after an hour, and leave it for 2-3 hours depending on how thick the steaks are.

Sounds like you have blade of beef, lots of nice recipes. Slow, low and with red wine
