I've made a couple of loaves before and just about getting the hang of it. But this is my first attempt at Tiger Bread. The small "pot" of stuff is a paste made from Rice flour, yeast, salt, sugar, oil and water.

It's now having it's second proofing, in a Banneton basket, in the oven on the dough proofing setting. The tricky bit is getting it out still in shape!!

Nice rise.....


And turned out in one piece



But as I feared it sank a bit whilst applying the paste but hopefully might get a bit of “oven spring”



Fingers crossed it’s now in the Steam oven.

About 30 mins for first proof then 40 mins for second. Really it depends on so many variables so rule of thumb is wait till its doubled in size and when you poke it with a finger it doesn't spring back.
