Cooking sausages

I want to be able to cook pork sausages so that the the Meat inside is succulent and the skins get sticky. Ive never been able to manage it. Any tips?

Never prick your sausage.

(good ones are a requirement or you might find you are actually cooking up cow lips and hooves).

Me too, works with all kind of 'fry up' food. I regularly have to do a big breakfast for up to 20 people.
I used to juggle with multiple frying pans and grill then keeping it all warm in the oven till I realized you can bung it all uncooked into the oven and come back in 15-20 minutes to a fully 'fried' breakfast. (eggs not included)

Very low heat & a little oil. Cast iron pans seem to give better results than non-stick.
Cook the sausages for about 1 hour, turning a couple of times.
In the last 10 minutes add a knob of butter & turn the heat up a little if required.

Get yourself an oven proof frying pan. Colour them on the hob over a medium heat. Once coloured, put the pan in the oven for 10 mins at 180c.

Yup, always bake sausages, and without any oil.

Brush on some Hoi Sin sauce and oven bake them - lovely and sticky thumbup

Cook the sausages in the oven with a little oil and the onions.
The juices from the onions help get the stickiness.

Thanks a lot gents! Consensus seems to be bung them in the oven, which suits me fine. Very grateful for your experience and advice

Without cooking them any differently, I’ve only managed to achieve this with “Heck” sausages.

They’re definitely my sausage of choice.

Cook them on a relatively low heat in a very lightly oiled pan. Cracking.

Yup, always bake sausages, and without any oil.
Yup. Since I discovered the convenience and reliable results of oven cooking sausages I've not fried or grilled any except in circumstances where an oven is not an option. Just line a tray with foil, bung 'em in without oil, shut 'em in the oven for 30 minutes or so, and turn 'em every 10 minutes to colour 'em evenly.

Having a "fry-up"? I oven cook the sausages, grill the bacon, and the only things that go in the frying pan are mushrooms and eggs. It's got nothing to do with 'being healthier' either. I just think it tastes better and is more convenient/less messy.

I always buy super market "best" ones or from the local butcher and when I oven cook them I often find that the skin can go a bit tough, it's ok when using a knife but a when stuffing them in a sandwich it can cause problems.

I do mine slowly on the hob, I have cooked them in the oven but it's harder to keep an eye on them. It doesn't take an hour, usually about 25 mins. I put them in the heaviest frying pan I've got, and put a lid on it so the heat is retained and they cook through without burning.

I usually turn the sausages about 3 times, and they come out nicely browned, and still juicy on the inside.
