I need another new dish for a school menu and having come up with circa 90 different ones I'm struggling to find something exciting for the summer.

Criteria are...

1) Needs to be cooked on a stove top, no ovens available on Monday.
2) Needs to use meat as its main protein.
3) Needs to be served with pasta or rice but cannot be curry or bolognaise.
4) Has to be suitable for ages 3-18.
5) Needs to be cooked from scratch in 90 minutes.

Budget is limited but this could be a more expensive meal as others on the menu balance it out, anywhere from £1.20-£1.50 per portion would be okay.

Suggestions?

Could you do some sort of poor man's Jambalaya? What about using cheap chorizo, chicken thighs, and plenty of veg?

Maybe pork fried rice with one spring roll? Mild jerk chicken? Swedish style meatballs with rice and red cabbage? Meatloaf? Tempura fish nuggets with rice and sweet chilli sauce? Stroganoff?

Goulash with shin of beef or similar to keep the cost down, toning down the paprika heat for the kids?

Is it just the ovens out of action or can you deep fry or grill?

If so:

Southern Fried Chicken (Legs if you really want to keep costs down) Rice and Peas, some sort of slaw and corn on the cob?

Lamb Koftas, Pittas, Salad, Rice?

Burritos, Salsa?

Pollo Milanese/Schnitzel type affair depending on Pork/Chicken

Depends on how many of those have already featured in the 90 that have gone previously!

A take on carbonara? Use ham as the protein, maybe chicken? Not sure how that is to cook at scale, though!

A take on udon noodle stirfry with the relevant protein?

Thanks for the ideas so far, and yes it would help if you new what was already on the menu, forgot that!

I'm tempted to go with meatballs as that was actually the original plan.I do have a couple of gas oven that have some capacity on Mondays and that would be good enough to braise the meatballs for an hour.

Any other ideas welcome. I need about a dozen new dishes over the next 6 months, the kids all like favourites, pizzas, fried chicken etc but are always asking for new things to try next term!

If you can get hold of several pressure cookers, you can do pulled pork in about 1.5 hours.

In fact a pressure cooker could speed up quite a few "low and slow" dishes like stews and casseroles

If you can do meatballs, then some Swedish style meal, meatballs, mash, peas, that special brown gravy they do. Afters? Pancakes, jam and cream, though really that's part of a Thursday meal, Pea and Ham soup and pancakes, ate it every Thursday for about ten years, never tired of it.

How about a Paella?

A digression and off topic, but why does it have to contain meat?
Surely most people have meat or fish with pretty much every meal as it is, so maybe an opportunity to demonstrate that meals without meat/fish/poultry/dairy/etc. are feasible, delicious and healthful. Probably save on cost and prep time too.

We could do a "No Meat Monday" but it does need to be something kids will eat. And, there does have to be meat and or poultry at least 3 days a week, traditionally in this school it is always fish on Friday so a no meat meal might be worth a bash again.

I say again because we did try it with a mixed bean chilli, wraps, cheesy tortillas and Spanish rice. Older kids liked it but the texture was difficult for the younger ones.

Any clever suggestions welcome.

Spiced lentil cakes, chilladas as Delia refers to them, with spicy tomato sauce, various options for accompaniments, we like sweet potato wedges and a salad but appreciate that may not fit with mass catering.
