By breaking everything down bit by bit you can normally work out ratios to get the flavours similar.
Obviously "flame grilling" will be an element of it as well.
Biggest factor I find when recreating take-away is let your replica rest wrapped up for a few minutes in a luke warm oven.
Brings the whole thing up to an even temperature and that really does make a massive difference.
