Polish food, in Poland what to try?

The sausages are excellent but so unhealthy it's unbelievable (70%+ fat) so I limit myself to Christmas and Easter treats (when they are traditional anyway).

Definitely try some Bigos, it's basically sourkraut but with added meat and pork fat and is a lot nicer than it sounds. Pierogi are also a good shout be beware that there are different types of filling so know what you're ordering. Meat fillings are good as are cheese and potato otherwise known as ruskie pierogi. They can be filled with no end of stuff but those are the two main types you're likely to find.
Pickled herrings are also great but only served as a starter. Try them in cream if you're not sure. As already mentioned the Kotlet Schabowy which is a veal cutlet is to die for.

Got back from my 3 days away very stuffed and craving a salad!
First afternoon, this was a polish selection plate, picked eel, smoked trout, pate etc, it was all very nice and had a clean plate

The only thing I didn't get to try, that i wanted to was smalec, another time!
