How to best store a rib of Beef till Boxing Day?

How would you store a rib of beef, it's arrived vacuum packed and is at least 28 day aged.
Wife says leave in fridge as is and remove day before cooking.
I'm thinking remove from vac pack and wrap in clean cotton towels. Store in fringe.
We do have a spare fridge with nothing else in to use?

I don't know if it's the right thing to do but I like to unwrap beef and leave it to "dry" in the fridge for 24h before eating. Helps with a nice crust. Wife says leave in fridge as is and remove day before cooking.
