Xmas gammon/ham cooking methods, whats your best?

Just been to the butchers and got a lovely slab of smoked gammon to see us through xmas 
Now I have poached in coke before, then crisped in the oven, that was decent.
But my go to recipe it to smother it all in honey and wholegrain mustard, stick some cloves in it, and roast it!
Anything I should be doing different?
Any must have recipes?

I'm doing one today. Firstly I'll boil in equal quantities of cider, apple juice and water, with some apples, cinnamon sticks and cloves thrown in. After that it's onto the Big Green Egg (tomorrow) for a cold smoke for 8 hours or so, and then finally a glaze and a light hot smoke before serving. It's a variation on this, and always gives amazing results:

Well we did the ham today, and I’ll be honest, stuck to the honey and mustard route, but did follow this recipe, swapping the OJ for cider

Just looked in the oven - there's a massive ham in there now, the display shows 80C and it's been in there for coming up to 18 hours 
Wifey has just told me it's been smothered in black treacle and it's shortly going to be uncovered and coated in demerera sugar and mustard prior to roasting. Photo to follow ....................
