Tipi Wedding Food Help !!

Daughter is getting married in September in West Sussex. 80 guests and maybe 100 by the evening.
Tipi wedding in a field reception from 12.30.
They want canapes on arrival and drinks then wedding breakfast , they want fish and chips then evening Pizza.
Odd I you ask me but all the rage if you are 25 I believe now. I thought I would pay and pay for drinks till about 6pm then go over to cash bar .

Holy fish I am going to have to work an extra year before I retire the quotes are unbelievable .

Any suggestions on who to use , any caterers on here that could help and give suggestions

Mention wedding and everyone doubles it and adds a zero. Don’t mention it’s a wedding when getting quotes.

Get some food trucks in and tell them it's a party... as noted before, mention wedding and the costs rocket unnecessarily!
(I do find the idea of canapés odd if you're having fish and chips, unless the canapés are picked eggs wink )

OP: if it's in a field, what type of bar will there be? A truck or a marquee bigger than the tipi?

OP, where is the wedding?

Sorry, just re-read, West Sussex. I'll have a look through some of my old stuff and see if I can think of anyone in the area.

That, I've never been to a wedding that has a free bar for the evening reception. I've been to some where there's money behind the bar for a couple of drinks for the people there all day which is nice.

One of my mates had baskets of miniatures that his wife and him took round the party at night. It let them say hello to everyone and everyone got a couple of free drinks.

Is it a sit down meal for the fish and chips? Is power/water available in the field? Are the caterers you have approached food trucks or professional wedding caterers doing all 3 elements.

I have done a lot of work for a large wedding caterers in London, and still do when they're short or get a large function on and need more chefs.

Catering a wedding is expensive. People look at the cost pp and forget everything that goes into that. For example:

Front of house to serve and clear - paid hourly. For your numbers I'd expect 8 people to do a good job.
Chefs - 3/4 for that number of people.
Equipment hire - For that type of food, they'd need to hire in fryers, and pizza ovens, tables and chairs, crockery, cutlery, glassware, linen, serving platters, and a million other things.
Actual cost of produce
Logistical expenses - getting there, diesel, staff expenses etc etc.
Profit - It's not unreasonable of them to expect to make a bit of profit.

Happy to offer advice if required.

I've never been to a wedding where anything other than the wine with the meal was paid for. Why would anyone have an issue with buying their own drinks at the bar?

you would need perhaps 12 large fryers for the fish to cook at the same time and a further 8 for the chips.

Lots of oil, staff etc.

Howe and Co Fish and Chip vans are local to me (Milton Keynes) however I have been to two weddings recently where they appeared and we were nowhere near home. I can also really recommend their food, give them a shout. https://howeandcofishandchips.co.uk/#events

you would need perhaps 12 large fryers for the fish to cook at the same time and a further 8 for the chips.

Lots of oil, staff etc.
Realistically, you're not going to fry everything at the same time. You'd fry the fish first and 'hold it' to keep warm much like a chip shop does ( for that I'd use the pizza ovens) Then do the chips. You'd need a few big fryers, but not nearly as many as you suggest.

A friend runs a mobile wood fired pizza business and travels all over. He is set up for this kind of thing and often does weddings, birthdays etc.

It is called twisted pizza do a quick Facebook search.

A fish and chips shop generally cooks 6 - 8 pieces at a time and the cook takes 8 - 10 minutes, with say 3 minutes between each fry.

The first pieces cooked may have to be held for over an hour as sufficient are cooked so there is no delay in serving tables.

The chips again will be a cold mess.

How many pieces of fish would you get in a pizza oven?

To hold properly you would need a combination oven, but again the time to hold is the problem.

I have in the past used frozen battered fish and cooked in the combi oven. It is nothing like the fish and chip supper expected.

6 fryers on the go for the hand cut chips and away you go.

And then the mushy peas to think about

Isn't part of the issue that you want canapes (so a traditional caterer), then fish and chips (needing fryers etc) and then pizzas. All in a field.

She also wants a circus with live animals and an air display from trained toucans .
