Evening!

Many years ago I used to order a tarragon sauce at the local pub (Ember Inns) to go with a mixed grill. It was simply on the menu as ‘Tarragon sauce’, so didn’t mention the extras with it.

I’ve searched a number of tarragon sauces but they’re usually a white/green creamy colour, the sauce I ordered had a red/orange/light brown colour to it.

Any ideas on what type of tarragon sauce it could have been?

Are you thinking of a Bearnaise sauce, that was very popular back in the day.

No it was definitely a tarragon sauce of some sort.

Still enjoy the béarnaise sauce with a juicy fillet steak biggrin

Bearnaise is tarragon based (or at least it should be), and in the old days food colouring was used to make it bright yellow in place of lots of egg yolk. This then deepens in colour on the surface as it dries and goes a bit old. So a dark yellow/orangey colour tarragon sauce back in the 80's in a steak house was pretty much the norm.
