Making Rollmops

Hi All,
I remember many decades ago, my mum used to make rollmop herring - they tasted great !
Thing is though, it ain't easy to find fresh herring; I was wondering, has anyone ever tried making rollmop mackerel ?
Like the herring, the mackerel is an oily fish (though stronger tasting) and given that it is possible to get them fresh, might they work well as a replacement to the herring in a 'rollmop' ?
If anyone has ever tried this, please let me know - any recipes for rollmops of any kind would be much appreciated.
