I've always been annoyed with the longevity of normal white mushrooms, if you leave them covered in the punnet they go dark and slimy, leave them uncovered and they dry and shrivel up.
I bought some chestnut mushrooms knocked down as they were on the best before date. One and even two weeks after they still look and taste the same as when I bought them!

Surprised you haven’t eaten them yet? Best fried up in a butter, with some garlic.

I've noticed this too. Chestnuts seem to last longer than whites. Slightly better flavour too.

Don't chuck those odds and ends of mushrooms out.

They dry just as well as 'wild' mushrooms, and drying concentrates their flavours.

Slice thinly and dry on paper towels over a radiator, then store in an air tight jar. Chop finely and add to any savoury dish for an umami hit.

Good idea with the dried mushrooms there, beats eating the blackened ones!
Can't believe i've only just discovered this at my age.

Partially opened ziploc bag in the fridge, they’ll last a couple of weeks. Stick a slightly damp bit of kitchen roll in there if you want, and keep it slightly damp every couple of days.

Chestnut mushrooms from now on thanks, although if I develop a taste for black slimy white ones I'll give you a shout.

I thought that transferring them to a brown paper bag was the best way to store any mushrooms.

Mind you as there are only two of us we tend to buy what we need for the week from the market.

At this time of year the world of mushrooms take on a million flavours.

Irrespective of variety I pretty much always semi-dehydrate mushrooms before use. Even tonight on a couple of pizzas I broke the Aldi chestnut mushrooms into small pieces and chucked them in the oven on 100 with a wooden spoon keeping the door ajar.

Meanwhile sorted out all the other bits and by the time we were ready to make dinner they had been in the oven for nearly a couple of hours.

Better (non boiled slug... kids description) texture and concentrated flavour.
