Here in the colonies it can be difficult and expensive to get Pimms, and on occasion we don't receive enough guests from Blighty to top up our stocks of Duty Free. As I contemplated the horror of a balmy SoCal November evening without Pimms, I dimly remembered a Times article about "Cheat's Pimms". The Times has hidden the recipe behind a paywall, so I have experimented without the Thunderer's guidance.

A mix of four parts gin, two parts Martini Rosso, and one part Triple Sec seems to have enough gin to cut through the sweetness of Sprite (oh, for a bottle of R White). I publish this as a service to all the other unfortunate expats who are trying to cope with 28C evenings at this time of year.

Pimm’s is so much better if you replace the lemonade with Champagne.

I use this purely because I find OEM Pimm's too sweet.

2 parts Gin
2 parts Red Vermouth
1 Part Orange Curacao (or Triple Sec!)
Lemonade

Ice, strawberries, cucumber, orange, mint.

Mix together, dilute to your preference with lemonade (we usually measure one part spirits to four parts Lemonade)…
