I'm looking to do a variety of starters for Christmas Day and one of them will be pate. I've never made it before and there's a million recipes out there! Has anybody got any knockout suggestions? Thanks

Raymond Blanc's chicken liver parfait takes some beating.

Follow all the steps and don't be tempted to cut corners.

I like this recipe because the livers are fully cooked. You'll need an instant read thermometer for this. So many recipes purée semi raw livers, which is just asking for food poisoning, which no-one wants at Christmas.

Getting the fat content rights really important. I had a pate the other night at our works party and it was dry, dry, dry.


Edit: Just to add, if you have the time a really good home made ham hock terrine is hard to beat and butchers have piles of ham hocks for pennies this time of year.

I'd suggest making a trial one advance, just so you can adjust seasoning and texture etc to your taste.
