Just make you sure you crisp up the fat cap around the edges as that’s where all the flavour comes from.
I prefer to render the fat down first and then the fat in the pan helps give a nice colour when you griddle the meat.
Thermapen is handy aim for 60c internal temp gives you a nice sweet and juicy medium.
