Cream cracker sustitute

Now I know this is a bit first world and if this is all I have to worry about things cant be too bad , but as only a cream cracker or possibly a water biscuit will do with my cheese I was so desperate last night that I had to find a substitute. Not going out and my home delivery has been out of stock for three weeks

I took two slices of multi grain bread,removed the crusts and rolled them as thin as possible. Light spray with olive oil, quick twist of sea salt from quite high up and 7 min at 180° in the air fryer.
Very acceptable . I think it must be all about the crunch for me.
Does anyone have a better suggestion ??

This is why you should always have a back up supply of thin stockans oatcakes

Make some proper Melba Toast.
Works best with sliced white/brown but any bread will do.

Make toast normally.
Cut off crusts
Slide bread knife between the two toasted sides
Scrape uncooked bread from the untoasted side
You will now have 2 pieces of toasted side
Cut into 2 triangles
Toast uncooked side under hot grill.
Superb for pate and cheese and a piece of piss to knock up a load as it keeps for ages in a biscuit tin.
