As thread title, can anyone recommend a good source of sushi-grade fish? No 1 son's birthday is close by; he's sushi-obsessed. Obviously I'm struggling to find local suppliers of decent fresh fish right now (I'm in the Yorkshire Dales on lockdown).

Try speaking to your local morrisons fish counter. They might be able to get what you want. There has been some interesting fish available recently.

Just out of interest, what is you are after? My b-i-l supplies most fish ports in the SW so he will probably know someone somewhere.

I have ordered from the fish society a few times - they have been really good. Good customer service too.

Thanks. They’ve just emailed to say they’ve got stock back again, so my wife is on the case smile They’re eye-wateringly expensive compared to when we used to live in London and buy directly from Billingsgate, but that’s one of the demerits if Yorkshire Dales life smile

Be VERY careful with preparing sushi in the UK at home. Many types of fish (especially fish that spend part of their lifecycle in sweet water like salmon) can be infected with parasites that make them unfit for use in sushi as there is no cooking process to kill the larvae. These types of fish must be deep frozen for quite a long time to kill the larvae and make them safe for use in sushi. Some say that farmed salmon is safe, but there is evidence which disagrees.

I am a sushi lover and make a point of trying to find the best sushi restaurants, yet I find the risk of eating infected fish far too great to consider making it at home unless I buy the fish from a supplier who knows what they are doing and how to make the fish safe. Luckily I live in Surrey and I'm just a 30-minute drive from one such supplier - Atari-Ya who have a branch in Kingston upon Thames. They supply fish to all of the top sushi restaurants in the UK. Having said that, they have a counter where you can order sushi which is made to order, so I do that and forget about making it myself!

Salmon and tuna that is safe to eat raw, is difficult to find and expensive when it is available in the UK.
I make do by blowtorching the 'normal' salmon.
Also tried smoked salmon on sushi rice wrapped with a piece of nori (seaweed) which is a reasonable alternative, (but would be sacrilege to any Japanese person).

Blow torching the salmon won't do anything to kill the larvae within the flesh unless you really cook the fish. And yes, smoked salmon is sacrilege in sushi! You should be okay with tuna, as long as you can find it super fresh! Here in the UK it's too old by the time it gets on a supermarket fish counter or worse, is pre-packed!

Also the King Crab. We prefer the raw over the cooked. We stream it and serve with lime butter.
