/personally i'd go with Tonks, I've cooked for him and I know, that he knows, what he is on about. Plus he's actually a pretty nice bloke.

LondonBBQschool based in Peckham
I bought a course for my brother and although he considers himself good around a BBQ he said it was good fun and useful, he even learnt a few things.

Although he did a low and slow course they also do a fish course, BBQ a few different types of fish, they use Kamado Joes.

That's useful, will take a look. She's got a mini green egg but isn't overly confident with it so this could fit the bill.

The guy I mentioned above will do private classes, and you can pretty much choose what you want to learn about.
