What do I eat with my salad.

Tips please.
The garden is producing ample cucumber, lettuce, radish and baby tomatoes so two weeks ago my wife declared a family diet.
We have hard boiled eggs, small baked potatoes and omelette but I really need a change.
We are both vegetarian and I can't persuade her towards cold soups.
Does anyone have any suggestions ??

Add some cooked barley groats to your salad.

Make sure you salt the water.
Also great with feta cheese.

Not exactly "diet" but shallow fried spiced potato cakes are great and for variety dehydrate tomatoes in the oven on very low to make your own sundried tomatoes (keep in oil for a few weeks in the fridge easily). Pickle some of the veg, especially radishes, carrots etc BBQ the lettuce and put with a blue cheese dressing.
I'm not a big salad fan but something like a Caesar always wins, add in lots of char grilled croutons and a couple of poached eggs on the top and you have a decent meal.

Why does a veggie ever need to go on a diet in the first place?
I’m not a veggie by any means but we eat veggie food a few days a week and find falafel with salad and hummus is a good combination or sweet potato pakoras.
